ANGUS RESERVE TRIPLE CHEESEBURGER

Ingredients.
  • 1kg Angus Reserve Chuck beef mince
  • 1½ tsp ground toasted fennel seeds
  • 2 eggs
  • ¾ cup breadcrumbs
  • ½ cup black bean sauce
  • sea salt flakes and freshly-ground black pepper
  • cooking oil spray
  • 125g haloumi, fried
  • 125g smoked cheese, sliced
  • 125g blue cheese, sliced
  • 4 brioche buns, split
  • ¼ cup Japanese mayonnaise
  • ½ cup baby gherkins, sliced
  • 1 cup red sauerkraut, drained
  • 1¼ cups spicy barbecue sauce
Method.
  • Combine the mince, fennel seeds, eggs, breadcrumbs, and black bean sauce in a bowl, season generously with salt and pepper, then mix well until smooth.
  • Form into 12 patties with damp hands. Sprinkle with cooking oil spray, then cook over a moderate barbecue grill for 8 minutes, turning several times, until firm.
  • Put haloumi, smoked cheese and blue cheese onto four patties each.
  • Drizzle the bun bases with Japanese mayonnaise, then top with gherkins and sauerkraut. Stack the patties on top, drizzling each with spicy barbecue sauce.
