SPICED ANGUS RESERVE T-BONE WITH EASY HERB SAUCE AND KIPFLERS

Ingredients.
  • 4 x 350g Angus Reserve T-Bone steaks
  • Sea salt flakes and freshly-ground black pepper
  • 2 tsp peri-peri seasoning
  • ½ cup extra virgin olive oil
  • ½ bunch parsley leaves
  • ½ bunch dill
  • 2 cloves garlic
  • 1 tsp capers
  • Finely grated zest of 2 lemons
  • 500g Kipfler potatoes
  • 1 Tbsp unsalted butter
  • ¼ bunch chives, snipped
  • ½ bunch finely chopped parsley
  • Steamed green beans and roasted tomatoes, to serve
Method.
  • Season the steaks with salt and pepper, then rub with peri-peri seasoning. Drizzle with 1 Tbsp extra virgin olive oil, then cook on a moderate barbecue grill for 12 minutes, turning several times.
  • Combine the herbs, garlic, capers and zest in a food processor with the remaining oil and purée until smooth. Season with salt and pepper.
  • Steam the potatoes until tender, toss with the butter and chives, then season with salt and pepper. Serve with the beans, tomatoes, steak, herb sauce and parsley.
