ANGUS RESERVE SYRIAN BEEF SHIN STEW WITH ADZUKI BEANS

Ingredients.
  • 1.8kg Angus Reserve beef shin
  • Sea salt flakes and freshly-ground black pepper
  • ¼ cup extra virgin olive oil
  • 2 red onions, diced
  • 4 sticks celery, diced
  • 10 cloves garlic, minced
  • 4 sprigs rosemary, finely chopped
  • 2 Tbsp tomato paste
  • 2 Tbsp za'atar
  • 2L beef stock
  • 2 x 400g cans adzuki beans, drained
  • 2 cups green peas
  • coriander, yoghurt and pita bread, to serve
Method.
  • Season the beef with salt and pepper, then sear in a large pan set over a high heat in extra virgin olive oil, until browned. Set aside, then add the onions, celery, garlic, rosemary, tomato paste and za'atar to the saucepan and cook until just softened.
  • Return the beef to the saucepan, then add the stock, fit the lid, and simmer for 2½ hours. Add the adzuki beans and cook for a further 30 minutes. Fold in the peas, then serve with coriander, yoghurt and pita bread.
