ANGUS RESERVE SYRIAN BEEF SHIN STEW WITH ADZUKI BEANS
1.8kg Angus Reserve beef shin
Sea salt flakes and freshly-ground black pepper
¼ cup extra virgin olive oil
2 red onions, diced
4 sticks celery, diced
10 cloves garlic, minced
4 sprigs rosemary, finely chopped
2 Tbsp tomato paste
2 Tbsp za'atar
2L beef stock
2 x 400g cans adzuki beans, drained
2 cups green peas
coriander, yoghurt and pita bread, to serve
Season the beef with salt and pepper, then sear in a large pan set over a high heat in extra virgin olive oil, until browned. Set aside, then add the onions, celery, garlic, rosemary, tomato paste and za'atar to the saucepan and cook until just softened.
Return the beef to the saucepan, then add the stock, fit the lid, and simmer for 2½ hours. Add the adzuki beans and cook for a further 30 minutes. Fold in the peas, then serve with coriander, yoghurt and pita bread.
