ANGUS RESERVE FIREBALL CHEESEBURGER

Ingredients.
  • 1kg Angus Reserve Chuck beef mince
  • 1 tsp ground cumin
  • 2 Tbsp tomato paste
  • 1 Tbsp harissa paste
  • 2 eggs
  • ¾ cup breadcrumbs
  • sea salt flakes and freshly-ground black pepper
  • cooking oil spray
  • 16 slices burger cheese
  • 4 bap buns, split
  • ¾ cup sriracha mayonnaise
  • 1½ cups baby salad leaves
  • 12 slice crisp eye bacon
Method.
  • Combine the mince, cumin, tomato paste, harissa, eggs and breadcrumbs in a bowl. Season generously with salt and pepper, then mix well until smooth. Form into 8 patties with damp hands.
  • Sprinkle the patties with cooking oil spray, then grill on a moderate barbecue for 8 minutes, turning several times, until firm. Arrange the cheese slices on top.
  • Spread the bun bases with sriracha mayonnaise and top with leaves and bacon. Put two patties on top of each, and dress with remaining sriracha mayonnaise.
