ANGUS RESERVE BEEF JERKY

Ingredients.
  • 1.5 Lbs thinly sliced Angus Reserve top round beef or bolar blade
  • 1/3 cup soy sauce
  • 1/3 cup Worcestershire sauce
  • 1 Tbsp ground coriander seed
  • 1 Tbsp ground fennel seed
  • 1 Tbsp white peppercorns
  • 1/2 tsp chilli flakes
  • Zest of one lemon
Method.
  • In a large bowl, mix the soy sauce and Worcestershire sauce with spices and lemon zest. Add in the sliced beef and mix well. Leave to marinate for 3-4 hours.
  • Remove the meat from marinate and pat well with paper towel to remove as much moisture as possible. Transfer to a cake rack or perforated sheet pans and place into the oven or dehydrator. Select the dehydrator function (52C/125F for 4 hours). You may need to adjust the time depending on thickness and texture of the meat. The thicker the beef, the longer the dehydrating process.
